For a big playthrough, do some simcity. For co-op, play worms. For a big single player playthrough, do Starcraft 2 heart of the sworm, in which you can then do multiplayer playthroughs.

I'd say go with what you're excited to play, because if you don't enjoy it yourself then it might lower the chance of others enjoying your playthrough.

Test a few games and post them on Youtube and see what kind of feedback you get. Experiment, Becoming a good YouTube channel is down to the content that you post. The quality of the content and how much you communicate with the people who watch your videos.
Above all though it's your channel. Play what you feel best with. Just don't play games like Final Fantasy. (There are ton's of lets plays for the FF series, Most famous one is H.C Bailey)

I would say stick to the basics first like Super Mario OR play a game you love and will talk about alot. Two safe bets.
