It takes a lot longer to do it from scratch and while I'm doing an 8bit a day I usually just remix and edit midis and gp files. I cannot find any files on that song, but if it is ok with you, I can do something like the Uka Uka boss theme

I put quite a bit more time into these than it seems. If I do it from scratch when I'm not pressed for time, I do most of it in tuxguitar. Often, when I don't have as much time, I look at existing guitar pro files and or midis and work with them to create it 8bit, and change some of the instruments around. I usually do the finishing touches in audacity.
