Just make sure you give yourself a clear marker for where they sync up. For example, I always start audio rolling first and then say exactly when I hit the record key for video so I can know where to split my audio track to match up with where the video starts. As long as you can sync up both tracks together, they're easy to edit from there.

It is true Pewdie just kind of has "it." He's charismatic and comfortable and silly and effortlessly watchable on camera. Also you do need to have a lot of luck. Amnesia reaction videos were ripe to be popular and viral during that time and pewdie was doing them well.

I suppose I don't really mind cutting out 10 minutes of being stuck, though I haven't minded Pewdie's commentary when he's stuck on puzzles in the past, but if you cut that out you should at least pad it a bit so you're not jumping immediately to the moment you discover the solution.
