Make sure you're recording all of the audios with same sample rate. If you record gameplay with 48 khz and webcam with 44.1 khz they will be out of sync.

Pretty much what pomeranian said. The more frames you record the more you can slow down your footage. Tho the numbers what he listed are bit overkill for pc game. Videos length from 10 to 30+ minutes 1080 tend to be anything between 1gig to 4 gigs for me. General rule of thumb seems to be every 10 minutes = 1 gig with settings I run.

That green screen effect is called Chroma key. You pretty much select color and range of similiar colors that will turn into transparent. He used same thing on the salad video you mentioned. Even with the shadow on the background you can still smooth it out to some degree. If you watch carefully that salad video explosion, you can still see that the part with shadow isnt actually fully transparent like the right side that had more light.
